Almond Nougat

The origin of nougat comes from Arab culture, which was incorporated into various cuisines in America during the Conquest and perfected with the addition of sugar cane.   • 2 cups almonds
  • 1 cup sugar
  • 1 cup honey
  • 1 teaspoon orange zest
  • 2 egg whites
  • 1 teaspoon salt
  • cornstarch, for flattening the nougat
  • almonds, for decoration
  • rosemary, for decoration

  • Preheat the oven to 120 °C.
  • Place the almonds on a tray lined with parchment paper; make sure they are spread out evenly. Toast for about 15 minutes, stirring constantly with a spatula until they change color. Set aside.
  • In a small saucepan, cook the sugar with the honey, stirring constantly until they reach 130 °C. Once it reaches the temperature, stop stirring and keep it on the heat for a few more minutes. Remove from heat and cool slightly; remember that the consistency should be thick.
  • Beat the egg whites with a pinch of salt; it is not necessary to whip the whites to firm peaks.
  • Gradually pour the caramel into the egg whites while continuing to beat for about 4 minutes, until the mixture begins to thicken and cool. Mix in the toasted almonds and orange zest until fully incorporated. Place on a parchment-lined tray and, using your palms, flatten the mixture with the help of cornstarch. Let it rest for 3 hours.
  • Unmold the nougat, cut it with the help of a greased knife, and decorate with almonds and rosemary sprigs.
