In a small saucepan cook the sugar together with the honey while continuing to move until they reach 130 ° C, once it reaches the temperature stop moving and keep on fire for a few more minutes. Remove from heat and cool slightly, do not forget that the consistency should be thick.
Beat the egg whites with a pinch of salt, it is not necessary to mount the egg whites, that is, it is not necessary to make firm peaks.
Pour the caramel gradually into the egg whites while stirring for approximately 4 minutes, until the mixture begins to thicken and cool. Mix the above together with roasted almonds and orange zest until incorporated. Place on a bowl with waxed paper and with the palms of your hands, flatten the mixture using the cornstarch. Rest for 3 hours.
Unmold the nougat, cut with the help of a greased knife and decorate with almond and rosemary branches.

PRESENTATION

Cut into small squares, decorate with peppermint and rosemary.

TIPS

Remember not to stop moving the sugar with the honey when cooking them, since if you don't do it the honey will quickly overflow. If you don't have a thermometer, don't worry, just take care that the consistency is liquid and thick.
