Amaranth Alegrías

Alegrías are a typical Mexican sweet made from amaranth with pumpkin seeds, peanuts, raisins, and walnuts mixed with a piloncillo syrup; this sweet is very nutritious due to the complete nutritional qualities of amaranth, which has been cultivated for over 8,000 years.

  • 1/4 cups pumpkin seeds
  • 1/4 cups peanuts
  • 1/4 cups raisins
  • 1/4 cups pecans
  • 1/8 cups water, for the syrup
  • 125 grams piloncillo, for the syrup
  • 1/4 cups honey, for the syrup
  • 3 drops lime juice, for the syrup
  • 250 grams amaranth

  • Heat a pan over low heat and toast the pumpkin seeds with the peanuts, raisins, and walnuts.
  • Heat a small pot with water and dissolve the piloncillo with honey and a few drops of lemon. Cook until you obtain a semi-thick syrup. Add the amaranth and the dried fruits, mix immediately so they absorb the honey.
  • Place the hot mixture into metal rings, pressing well to compact. Let it cool and unmold. Share.
