Apple and Spice Cake

This delicious spice and apple cake is perfect for Christmas or autumn celebrations. The cake is infused with cinnamon, cloves, nutmeg, and ginger.

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 cups raisins, or blueberries
  • 3 tablespoons rum
  • 1/2 tablespoons baking soda
  • 1 tablespoon allspice
  • 1 tablespoon cinnamon
  • 1 tablespoon nutmeg
  • 1/4 tablespoons clove
  • 1/2 tablespoons salt
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 sticks butter
  • 3 eggs
  • 1 tablespoon vanilla essence
  • 3 apples, peeled and cut into small cubes
  • 1 cup walnuts, chopped
  • 1/3 cups crystallized ginger, chopped

  • In a deep bowl, soak the raisins in rum for 1 hour or until plump.
  • Preheat the oven to 180 degrees Celsius. Prepare a round cake pan with butter and flour.
  • In an electric mixer, combine the flour, baking powder, baking soda, and spices. Add the sugars, butter, eggs, and vanilla, and continue mixing.
  • Add the apple, walnut, ginger, and raisins.
  • Pour the mixture into the cake pan and bake until a toothpick inserted comes out clean (approximately 1 hour).
  • Remove the cake from the oven and allow it to cool before removing from the pan.
