200 grams flour, of butter
125 grams sugar
50 grams San Juan® egg, Preferably San Juan Liquid Vanilla Egg
1 flour, butter
2 kilos apple, sliced, for the filling
80 grams sugar, for the filling
4 San Juan® egg whites
80 grams icing sugar

In a bowl, mix the flour. Add the cubes of butter and knead until a homogeneous mixture forms.
Add the egg and vanilla. Knead just until combined. Refrigerate for one hour.
Slice the apples and simmer with the sugar for 10 minutes. Set aside.
Beat the San Juan Egg whites until they reach a stiff peak. Gradually add sugar until a meringue forms.
Roll out the sugared dough with the help of a rolling pin and a little flour.
Line a tart pan and leave a thin layer, then pre-bake for 10 minutes.
Pour the apple filling; if desired, some of the remaining dough can be used to decorate the apples. Bake the entire tart for 20 to 30 minutes.
Let cool and serve.
