Apple Filling

  • pasta, sugared
  • 200 grams flour, of butter
  • 125 grams sugar
  • 50 grams San Juan® egg, Preferably San Juan Liquid Vanilla Egg
  • 1 flour, butter
  • 2 kilos apple, sliced, for the filling
  • 80 grams sugar, for the filling
  • 4 San Juan® egg whites
  • 80 grams icing sugar

  • In a bowl, mix the flour. Add the cubes of butter and knead until a homogeneous mixture forms.
  • Add the egg and vanilla. Knead just until combined. Refrigerate for one hour.
  • Slice the apples and simmer with the sugar for 10 minutes. Set aside.
  • Beat the San Juan Egg whites until they reach a stiff peak. Gradually add sugar until a meringue forms.
  • Roll out the sugared dough with the help of a rolling pin and a little flour.
  • Line a tart pan and leave a thin layer, then pre-bake for 10 minutes.
  • Pour the apple filling; if desired, some of the remaining dough can be used to decorate the apples. Bake the entire tart for 20 to 30 minutes.
  • Let cool and serve.
