Apple or Chocolate Muffins

Recipe for delicious and easy apple or chocolate muffins.

  • 2 cups flour
  • 2 tablespoons baking powder
  • 1/2 tablespoons salt
  • 1/2 tablespoons cinnamon powder
  • 1/4 tablespoons ginger powder
  • 3/4 cups brown sugar
  • 1 San Juan® egg
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 tablespoon vanilla essence
  • 1 cup milk
  • 1 1/2 cups chocolate, or diced apple

  • Preheat the oven to 190° C and grease and flour the mold for 12 muffins.
  • In a large bowl, mix the brown sugar and the egg.
  • Put the butter in a heat-resistant container and microwave for 10 seconds, repeating the process until melted, let cool slightly, and pour it into the previous mixture along with the vegetable oil, vanilla, and whisk.
  • In another medium bowl, mix the flour, baking powder, salt, cinnamon, and ginger.
  • Gradually add the flour to the egg and sugar mixture and whisk a little, add milk and the chocolate pieces or diced apples and mix until the ingredients are combined.
  • Divide the batter evenly into the previously greased molds, filling each mold up to 3/4 full.
  • Bake for 15 to 18 minutes or until a toothpick inserted into the center comes out clean, let cool, and serve.
