Beat the egg and water in a small bowl with a fork.
Mix the sugar, flour, and cinnamon in a bowl. Add sliced apples and raisins and stir to cover.
Put the puff pastry on a flat surface with a little flour and knead to form a rectangle of 40x30 cm.
With the short side of the rectangle towards you, put the mixture of apples on top leaving a border of 2 cm around. Roll up like a cue.
Put the edge that is next to the bottom on a baking tray and fold down the remaining sides.
Cover all the puff pastry with the egg beaten with water. With a sharp knife, cut a few parallel rallies on top of the strudel (so that steam can escape).
Bake for 35 minutes or until the strudel is golden brown.
Remove from the oven and let it cool on a rack for 20 minutes.
