Beat the egg and water in a small bowl with a fork.
Mix the sugar, flour, and cinnamon in a bowl. Add the sliced apples and raisins and stir to coat.
Place the puff pastry on a flat surface with a little flour and roll it out to form a rectangle of 40x30 cm.
With the short side of the rectangle facing you, place the apple mixture on top leaving a 2 cm border all around. Roll it up like a taco.
Place it with the joined edge facing down on a baking sheet and fold down the remaining sides.
Cover the entire puff pastry with the egg beaten with water. Using a sharp knife, cut some parallel slits on top of the strudel (to allow steam to escape).
Bake for 35 minutes or until the strudel is golden.
Remove from the oven and let cool on a rack for 20 minutes.
