Easy to make and delicious baby meringues. They are very tasty meringues but cooked in a small size to make them bite-sized and not crumble. If you want, you can make them a little larger.

125 grams granulated sugar
1 teaspoon vanilla essence

Preheat the oven to 150°C. Line a baking sheet with parchment paper.
In a large bowl, beat the egg whites until stiff peaks form; it is important that they are at room temperature. Be careful not to overbeat.
Gradually incorporate the sugar until it feels smooth to the touch.
Add the vanilla.
Using a piping bag or plastic bag, pipe small portions onto the baking sheet.
Bake for 35 minutes or until the meringues are dry, being careful not to let them brown. Turn off the oven and let them cool inside the oven.
