Blackberry Cheesecake

  • 3/4 cups butter, melted, for the crust
  • 3 cups cream cheese, for the cheesecake

  • 1 cup blackberries, frozen, for the blackberry compote
  • 1/4 cups lime juice, for the blackberry compote
  • 1 cup sugar, for the blackberry compote

  • For the crust: In a bowl, mix ground cookies and melted butter. Press paste tightly in a pan to form the crust. Bake at 356 °F for 10 minutes. Let cool and set aside.
  • For the cheesecake: In a bowl, mix cream cheese and sugar for 2 minutes. For mixing more easily, cream cheese must be at room temperature. Add eggs little by little and mix until completely incorporated. Add cream and vanilla and mix for 2 more minutes. Set aside in the fridge.
  • For assembling the cheesecake: Pour cheese mixture into the baked crust until the 9.8-inch pan is ¾ full. Spread fresh blackberries on top and bake uncovered in a water bath at 356 °F for 1 hour. Let rest at room temperature for 2 hours and refrigerate.
  • For the blackberry compote: In a pot over medium heat, place frozen blackberries, lime juice, and sugar and cook for about 15 minutes stirring constantly until a soft paste is formed. Remove from heat and let cool at room temperature.
  • Garnish blackberry cheesecake with blackberry compote and whipped cream on the edges.
