Baked Blackberry Cheesecake

This summer cheesecake recipe is the seasonal dessert you can’t miss. Known as New York cheesecake, this type of cheese pie is baked in a water bath and has a very creamy texture, along with a delicate flavor. The blackberry adds a tangy contrast and has become a classic favorite in easy baking.

  • 1 1/2 cups honey cookies, crumbled, for the base
  • 3/4 cups butter, melted, for the base

  • 1 cup blackberries, fresh, for the cheesecake
  • 1 cup blackberries, frozen, for the compote
  • 1/4 cups lime juice, for the compote
  • 1 cup sugar, for the compote

  • For the cheesecake base, mix the crumbled cookies with the melted butter; with this mixture, create a base in the mold and bake at 180 °C for 10 minutes. Set aside and let cool.
  • For the cheesecake, beat the cream cheese with the sugar for 2 minutes; the cheese should be at room temperature for easier mixing. Gradually add the eggs, one at a time, until fully incorporated; add the cream and vanilla, and continue beating for 2 more minutes. Set aside in the refrigerator.
  • To assemble the cheesecake, pour the cheese mixture over the baked base until the mold (25 cm in diameter) is three-quarters full, distribute the fresh blackberries on top, and bake in a water bath (uncovered) at 180 °C for 1 hour. Let it rest at room temperature for two hours and then refrigerate.
  • For the blackberry compote, heat a pot over medium temperature and cook the frozen blackberries with lemon juice and sugar until a smooth paste is obtained (about 15 minutes); it’s important to stir constantly. Remove from heat and let cool to room temperature.
  • Decorate the cheesecake with the blackberry compote and whipped cream on the edges.
