1 1/2 teaspoons baking soda
1/2 teaspoons salt
4 bananas, ripe
1 cup brown sugar
3/4 cups butter
1 teaspoon vanilla essence
1/2 cups walnuts, chopped

Preheat the oven to 190 degrees.
Grease 2 muffin trays.
In a large bowl, mix the flour, baking soda, and salt. Set aside.
Mash 2 bananas with a fork in a small bowl.
Using an electric mixer, beat the other 2 bananas together with the sugar for 3 minutes.
Add the melted butter, the two eggs, and vanilla.
Mix well and scrape down the sides of the bowl to incorporate everything.
Gradually add the flour mixture until well incorporated.
Fold in the nuts and the mashed bananas with gentle movements.
Pour the mixture into the cupcake molds on the tray, filling them halfway (they will rise in the oven).
Bake for 18-20 minutes or until a toothpick comes out clean when inserted into a muffin.
Let cool for a few minutes and serve at room temperature.
