Banana and Nut Muffins

A delicious recipe for cupcakes, known as Muffins in the United States, made with bananas and nuts. Great for breakfast or with tea.

  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 4 bananas, ripe
  • 1 cup brown sugar
  • 3/4 cups butter
  • 1 teaspoon vanilla essence
  • 1/2 cups walnuts, chopped
  • 2 eggs

  • Preheat the oven to 190 degrees.
  • Grease 2 muffin trays.
  • In a large bowl, mix the flour, baking soda, and salt. Set aside.
  • Mash 2 bananas with a fork in a small bowl.
  • Using an electric mixer, beat the other 2 bananas together with the sugar for 3 minutes.
  • Add the melted butter, the two eggs, and vanilla.
  • Mix well and scrape down the sides of the bowl to incorporate everything.
  • Gradually add the flour mixture until well incorporated.
  • Fold in the nuts and the mashed bananas with gentle movements.
  • Pour the mixture into the cupcake molds on the tray, filling them halfway (they will rise in the oven).
  • Bake for 18-20 minutes or until a toothpick comes out clean when inserted into a muffin.
  • Let cool for a few minutes and serve at room temperature.
