Banana Bread with a Touch of Coffee

It’s always good to combine a nice dessert with a touch of coffee, creating a unique experience for the palate.

  • 250 grams flour
  • 250 grams sugar
  • 250 grams unsalted butter
  • 8 bananas, ripe mashed
  • 4 eggs
  • 1/2 teaspoons baking soda
  • 2 tablespoons instant coffee
  • 3 tablespoons coffee , in beans
  • 1 tablespoon vanilla essence
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 100 grams nut , chopped
  • 100 grams raisins, or blueberries
  • 100 grams shredded coconut
  • 1 glass whole milk

  • Preheat the oven to 180°C.
  • Grease a preferably glass pan with butter and dust with flour.
  • In a bowl, combine the mashed bananas, sugar, and milk, and stir until a batter is formed; there should be chunks of banana as they add another flavor dimension. A wooden spatula can be used for this.
  • Sift the flour, baking soda, baking powder, and salt to avoid lumps. This should be done in another bowl and mixed well until the various ingredients are indistinguishable.
  • Add the flour, baking soda, salt, and baking powder to the banana mixture. Mix slowly until the ingredients are combined.
  • Add the ground coffee, coffee beans, nuts, raisins, and mix.
  • Pour into the greased pan, sprinkle shredded coconut over the mixture, and place in the oven.
  • Bake for 40-45 minutes, checking constantly after 30 minutes to avoid excessive browning.
  • Remove from the oven and let cool, then enjoy.
