Banana bread with a touch of coffee

  • 250 grams flour
  • 250 grams sugar
  • 250 grams unsalted butter
  • 8 bananas, mature crushed
  • 4 eggs
  • 1/2 teaspoons baking soda
  • 2 tablespoons instant coffee
  • 3 tablespoons coffee, in grains
  • 1 tablespoon vanilla essence
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 100 grams walnuts, chopped
  • 100 grams raisins, or blueberries
  • 100 grams shredded coconut
  • 1 glass whole milk

  • Preheat the oven 180 ° C.
  • Grease a glass preferably with butter and floured.
  • In a bowl we put the mashed bananas, the sugar and the milk and stir until creating a dough, there should be pieces of the banana since these give another touch of flavor. For this we can use a wooden shovel.
  • Sift the flour, baking soda, baking powder and salt so that there are no lumps. This should be done in another bowl and mix well until the different ingredients are different.
  • Add the flour, baking soda, salt and baking powder to the banana mixture. Mix slowly until the ingredients are incorporated.
  • Add the ground coffee, coffee beans, walnut, raisins and mix.
  • Pour into the greased mold, sprinkle the coconut striped on the mixture and put it in the oven.
  • It is left to bake for a time of 40-45 minutes, constantly checking after 30 minutes to prevent it from being overcooked.
  • It is taken out of the oven and allowed to cool and enjoyed.
