Banana Bread with Alpen Muesli

  • 1/2 cups Alpen® cereal muesli
  • 2 cups whole wheat flour
  • 1 cup sugar
  • 1/2 cups Greek yogurt
  • 1 teaspoon cinnamon powder
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 ripe bananas
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla essence
  • 1 cup caramel, (store-bought) or homemade
  • 1/2 cups nut , chopped

  • Preheat the oven to 200°C.
  • In a bowl, mix the sugar and butter until creamy. Add the eggs, sliced bananas, yogurt, and vanilla extract until everything is well incorporated.
  • In a separate bowl, mix the flour, baking powder, 2 tablespoons of cereal, baking soda, and cinnamon.
  • Add the dry ingredients to the other bowl, and mix gently with folding motions.
  • Grease and flour a loaf pan, ensuring the entire pan is covered.
  • Pour the mixture into the mold, tap it on the table a couple of times to release the air from the mixture. Bake for 40 minutes at 180°C or until a toothpick inserted comes out clean.
  • Heat the caramel for 15 seconds in the microwave. Once the bread is warm, drizzle it with caramel, and sprinkle the remaining cereal and chopped nuts.
