Prepare this soft, delicious, and sweet banana cake with chocolate chips, the delicate touch of walnut, topped with a creamy cream cheese and white chocolate frosting. This spectacular cake will charm your whole family.
1 cup raw sugar, half for the banana and the other half for the cake
1/2 cups granulated sugar
2 eggs
2 tablespoons vanilla essence
3 cups flour, sifted
2 tablespoons baking soda, 10 g, sifted
1 teaspoon baking powder, 5 g, sifted
1 teaspoon salt, 5 g
1 cup chocolate chips, 150 g
1/2 cups whipping cream, hot, for the frosting
2 cups white chocolate, in pieces, for the frosting
3 tablespoons butter, for the frosting
1 cup cream cheese, cut into cubes, for the frosting
1/4 cups icing sugar, for the frosting
pecans, finely chopped, for decoration

Preheat the oven to 180° C
In a bowl, mash the banana with half of the brown sugar until obtaining a puree.
For the cake, beat the butter until creamy, add the remaining brown sugar and refined sugar, beat for 3 minutes. Add the eggs one by one, the vanilla essence, the mashed banana, incorporate the sifted dry ingredients and chocolate chips.
Pour the mixture into a previously greased and floured loaf pan, bake for 45 minutes or until cooked, remove from the oven and cool.
For the frosting, mix the hot heavy cream with the white chocolate until forming a ganache, refrigerate until thick.
Add the butter and cream cheese to the mixer, beat for 2 minutes or until creamy. Add the cold white chocolate mixture and powdered sugar, beat with the whisk until it doubles in volume. Refrigerate until use.
Cover the cake with the white chocolate frosting, decorate with finely chopped walnuts and enjoy.
