Banana Tiramisu

Tiramisu is a very popular dessert in Italy, but with this banana tiramisu recipe, we give a twist to the traditional sponge cake and cream flavor.   • 1 1/2 cups butter, for the cake 150 g

  • 3 cups mascarpone cheese, for the filling
  • 1/2 cups Greek yogurt, for the filling 116 g
  • 1 cup icing sugar, for the filling 140 g
  • 1 teaspoon vanilla essence, for the filling

  • 3 tablespoons instant coffee
  • 3 tablespoons coffee liqueur

  • For the cake, cream the butter and sugar until it changes color; add the eggs one by one until incorporated; add the flour, baking powder, salt, vanilla essence, and banana, mix well and bake for approximately 50 minutes at 175 °C. Set aside.
  • For the filling, mix the mascarpone cheese with the banana, yogurt, powdered sugar, vanilla essence, and Licor 43 until fully incorporated.
  • For the coffee mixture, in a bowl dissolve the instant coffee with water, add coffee liqueur and mix.
  • For assembly, cut the banana cake and place it in a baking dish, soak with the coffee mixture, place a white layer of cheese and repeat until finished. Refrigerate for one hour. Meanwhile, cut banana slices, coat with sugar and flambé; decorate with cocoa and the flambéed slices.
