Beet Dessert with Greek Yogurt

  • 6 beets
  • 2 cups sugar
  • 2 piloncillos
  • 1/2 cups spice rub, delpostre SPM
  • 1 cup Mezcal
  • 1 cup orange juice
  • 1 cup water
  • 1 liter Greek yogurt
  • 1/2 cups honey
  • lavender, fresh, for decoration

  • Wrap the beets in aluminum foil and cook them on a grill for 30 minutes.
  • Peel the beets and cut them into cubes.
  • Mix the beets with the sugar, piloncillo, rub, mezcal, orange juice, water, and rosemary.
  • Cook over heat for 45 minutes. Set aside.
  • Mix the yogurt with the honey.
  • Place the yogurt mixture in small cups, the beet dessert mixture, and decorate with fresh lavender.
