1/2 cups unsalted butter , softened
2/3 cups sugar
1 egg
1 1/2 teaspoons liquid vanilla
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoons salt
1 stick chocolate, for coating

Cream the butter and sugar in a large bowl using a mixer until light and fluffy
Incorporate the egg and vanilla
Add the combination of flour, baking powder, and salt
Mix everything well and refrigerate for one hour
Roll out the dough on a floured surface to 1/8 inch thickness
Cut into heart shapes with a 2-inch cookie cutter and re-roll the scraps
Place 2 inches apart on a baking sheet lined with parchment paper
Refrigerate for 30 minutes
Preheat the oven to 350° F. Bake the cookies for 10 minutes or until the edges are slightly golden
Let them rest for 5 minutes on the tray and transfer to a rack to cool completely
Melt the chocolate and dip one side of each cookie. Place back on the rack and let them rest until the chocolate hardens
