Birthday Chocolate Cake

  • 2 cups sugar
  • 113 grams semisweet chocolate, chopped
  • 8 tablespoons unsalted butter
  • 1 cup water
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon cider vinegar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 1/2 cups chocolate chips, semisweet
  • 1 1/2 cups sour cream, at room temperature

  • Preheat the oven to 375ºF.
  • In a pot, mix the sugar, chocolate, butter, and water over medium-high heat. Stir occasionally until everything is combined. Remove from heat and let cool.
  • Meanwhile, sift the flour, baking powder, baking soda, and salt.
  • Mix the milk with the vinegar in a small deep plate.
  • Grease a round cake pan with butter and dust with flour.
  • When the chocolate has cooled a bit, add the milk mixture and the eggs. Stir well and add the dry ingredients (flour, etc.). Once well incorporated, add the vanilla and stir.
  • Pour the mixture into the prepared pan. Bake until a toothpick comes out clean, about 30-35 minutes.
  • Let it rest for 10 minutes when it comes out of the oven and unmold. (Be very careful as the cake may break, make sure to handle it with care when removing it).
  • To prepare the frosting, melt the chocolate chips in a double boiler. Let them cool a bit and add 1/4 cup of sour cream. Stir and continue adding 1/4 cup until you have the desired consistency and flavor.
  • You can decorate the cake with the frosting or cut it in half and put frosting in the center.
