Blender Lemon Cake

Try this quick and delicious lemon cake in a blender, with yogurt and olive oil. Its fluffy texture will delight you and it is also perfect for your dessert business or to share with friends.

  • 1 tablespoon REXAL® baking powder, 15 g
  • 4 eggs
  • 3/4 cups sugar, 150 g
  • 1 cup olive oil, 187 ml
  • 1/2 cups yogurt, of lemon, 100 g
  • 2 tablespoons lemon zest, 30 g
  • 1 1/2 cups flour, 300 g, previously sifted
  • icing sugar, for decoration
  • lemon, sliced, for decoration

  • Preheat the oven to 180 °C.
  • Blend the egg, sugar, olive oil, lemon yogurt, lemon zest, flour, and REXAL® baking powder for about 5 minutes or until you have a smooth mixture.
  • Pour the mixture into a round baking mold, greased and lined with parchment paper. Bake at 180 °C for 40 minutes.
  • Remove the cake from the oven, let it cool for 10 minutes and unmold. Decorate with powdered sugar and slices of yellow lemon.
