1 tablespoon REXAL® baking powder, 15 g
4 eggs
3/4 cups sugar, 150 g
1 cup olive oil, 187 ml
1/2 cups yogurt, of lemon, 100 g
2 tablespoons lemon zest, 30 g
1 1/2 cups flour, 300 g, previously sifted
icing sugar, for decoration
lemon, sliced, for decoration

Preheat the oven to 180 °C.
Blend the egg, sugar, olive oil, lemon yogurt, lemon zest, flour, and REXAL® baking powder for about 5 minutes or until you have a smooth mixture.
Pour the mixture into a round baking mold, greased and lined with parchment paper. Bake at 180 °C for 40 minutes.
Remove the cake from the oven, let it cool for 10 minutes and unmold. Decorate with powdered sugar and slices of yellow lemon.
