  • 1 cup cow's milk, for the buttermilk
  • 1 tablespoon lime juice, for the buttermilk
  • 1 cup butter, (230 grams)
  • 1 1/4 cups sugar, for the cake
  • 4 eggs, for the cake
  • 1 tablespoon vanilla essence, for the cake
  • 3 cups flour, for the cake
  • 1 tablespoon baking powder, for the cake
  • 1/2 teaspoons salt, for the cake
  • 2 tablespoons lemon zest, for the cake
  • 1 1/2 cups blueberries, for the cake
  • 2 tablespoons flour, for the cake
  • 3 packages cream cheese, for the filling
  • 11/2 sticks butter, for the filling
  • 1/2 cups icing sugar, for the filling
  • 1 tablespoon lemon zest, for the filling
  • 1 tablespoon lime juice, for the filling
  • 200 grams vegetable shortening, for the frosting
  • 2 sticks butter, for the frosting
  • 3 cups icing sugar, for the frosting
  • 1 tablespoon lime zest, for the frosting
  • 1 lime, for decoration (cut into quarters)
  • 1/2 cups blueberry, for decoration

  • Preheat the oven to 180° C.
  • Mix the milk with the lemon juice until combined. Set aside.
  • For the cake: beat the butter with the sugar for 5 minutes. Add the eggs, vanilla extract, flour, baking powder, salt, lemon zest, and beat for 7 more minutes.
  • Mix the blueberries with the flour and add to the previous mixture, beat for 1 more minute just to combine.
  • Pour the mixture into three equally sized springform pans, bake for 20 minutes. Let cool and set aside.
  • For the filling, beat the cream cheese with the butter, powdered sugar, lemon zest, and lemon juice.
  • On a cake base, spread a bit of the previous filling, place a cake layer on top, add more filling, and repeat the process.
  • For the frosting: beat the shortening with the butter, powdered sugar, and lemon zest.
  • Cover the cake with the frosting. Smooth it out with a Bounty® paper towel for a perfect finish.
