Blueberry Pancakes (Blueberry)

Simple panquesitos ideal to accompany with a good coffee.

  • 1 teaspoon vanilla essence
  • 2 cups flour
  • 3/4 cups sugar
  • 1/2 cups vegetable oil
  • 3/4 cups cow's milk
  • 1 egg
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 teaspoon cinnamon powder
  • 1 cup blueberries, blueberry

  • In a bowl mix flour, cinnamon, salt and baking powder with a whisk.
  • Add the lightly beaten egg, oil, sugar, vanilla and milk.
  • Incorporate the ingredients well and finally add the blueberries, being careful not to break them.
  • Place the mixture in molds for pancakes (cupcakes), fill them 2/3 of their capacity and in an oven preheated to 180 degrees (350) for 25 to 30 minutes.
  • Remember to insert a toothpick into the center of the pancakes and check that it comes out clean. Let cool and accompany them with a delicious coffee.
