Easter Bunny Cake

  • 2 1/4 cups cow's milk, for the buttermilk
  • 6 tablespoons lime juice, for the buttermilk
  • 4 1/2 sticks butter
  • 2 1/4 cups sugar
  • 6 eggs
  • 3 egg whites
  • 2 teaspoons vanilla essence
  • 6 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt

  • 200 grams cream cheese, for the cake balls, divided into 4
  • 190 grams cream cheese, at room temperature, for the frosting
  • 115 grams butter, at room temperature, for the frosting
  • 3 cups icing sugar, for the frosting
  • 1/2 cups cocoa powder, for the frosting

  • Preheat oven to 356 °F.
  • For the buttermilk: In a bowl, mix milk and lime juice and let rest for 10 minutes.
  • For the sponge cake: In a bowl, mix butter and sugar until incorporated. Add eggs one by one, egg whites, and vanilla essence.
  • Little by little, add flour, baking powder, salt, and buttermilk and mix until a homogenous batter is obtained.
  • Pour one ladle of batter into 4 bowls. Stain each bowl with a different color of gel food coloring. Set leftover batter aside.
  • Pour each colorful batter into a small pan and bake for 25 minutes. Let cool and unmold.
  • Crumble colorful sponge cakes and mix with cream cheese. Make small cake balls with your hands. Set aside.
  • Pour ¼ of the plain batter into a 9-inch round cake pan. Arrange colorful cake balls and pour ¼ more of plain batter to cover the cake balls completely. Repeat in another cake pan.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean. Cool and unmold.
  • For the chocolate frosting: In a bowl, mix cream cheese and butter. Using a sieve, add icing sugar and cocoa powder.
  • Place a cake as the base. Place a bit of frosting on top. Top with the second cake and frost with leftover chocolate frosting.
  • Arrange chocolate bunnies around the cake. Arrange colorful chocolate eggs on top of the cake. Garnish chocolate Easter Bunny cake with a ribbon.
  • Cut Easter Bunny cake and pair it with a glass of cold milk.
