Place the butter, sugar, lemon zest, and vanilla essence inside the bag. Mix with a wooden spoon until everything is integrated and the mixture is a light yellow color.
Add the egg, and then the sifted flour along with the salt. Combine until a dough forms. Wrap it in plastic wrap and chill for 1 hour.
Remove the dough from the fridge and roll it out with a rolling pin on a floured countertop (try to keep the dough at an even thickness).
Cut out shapes with cookie cutters and place them on a previously greased baking sheet.
Bake the cookies in a preheated moderate oven at 180 degrees for 10 to 12 minutes, remove them, and place them on a wire rack to cool.
