In the food processor put the sifted flour, sugar and butter in small pieces and process for a few seconds to integrate the butter.
Beat the egg with the water and the vanilla extract. Add the flour and process a few seconds to form a ball.
On a floured table knead the pasta only to distribute the butter well for a few seconds and form a ball.
Divide the pasta in half and put the paste on a sheet of waxed paper and place another sheet of waxed paper on top. Knead and spread dough until 1/8 of an inch. Do the same with the other half. Cool the pasta for 30 minutes in the freezer.
Remove the pasta from the freezer and cut the cookies with a heart-shaped cutter. Half of the cookies cut with a round cutter the center to form some holes in the cookies.
Bake in lightly greased trays at 190 centigrade for 12 minutes, remove them and let them cool.
Put in the cookie without a hole of jam and in the other biscuit with the hole sprinkle with icing sugar. Put one on top of the other to form a sandwich. Repeat with the rest of the cookies.
