Banana Cake with Chocolate Chips

  • Preheat the oven to 350 ºF. Lightly grease a loaf pan.
  • In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  • In a separate bowl, mix bananas, coconut milk, oil, vinegar, and vanilla.
  • Pour the wet mixture into the dry mixture and whisk until combined. Add the chocolate chips, do not mix.
  • Pour the mixture evenly into the prepared loaf pan and bake for 50 to 60 minutes until a toothpick inserted in the center of the cake comes out clean.
  • Rotate the bread halfway through the baking time. Let cool and enjoy.
