Preheat the oven to 180° C.
For the cake, mix the dry ingredients and sift them. Set aside.
With an electric mixer, cream the butter with the sugar for 2 minutes. Add the egg yolks one at a time while continuing to beat. Reduce the speed and incorporate the dry ingredients alternately with the milk and vanilla until fully combined.
On the other hand, beat the egg whites until stiff peaks form. Gently fold the egg whites into the previous mixture. Divide into 6 medium containers and color each one with a different color. Pour each colored batter into previously greased and floured 18 cm cake pans.
Bake each colored batter separately to obtain 6 layers of cake, for about 20 minutes or until a toothpick inserted comes out clean. Cool and unmold.
For the whipped cream, beat the heavy cream on high speed and gradually add the powdered sugar and vanilla, continuing to beat until stiff peaks form.
Place the cake layers one on top of the other using a bit of whipped cream between each layer. Cover the cake with the remaining whipped cream and decorate with colorful sprinkles.
