Try this delicious Black Forest Cake; it's a typical German dessert. It is truly delicious and can be an ideal option to celebrate a loved one's birthday.
Preheat the oven to 175°C (350°F). Grease and flour 2 round 9-inch pans, lining the bottoms with parchment paper.
In a large bowl, combine the flour, 2 cups of sugar, cocoa powder, baking powder, baking soda, and salt.
Add the eggs, milk, oil, and 1 tablespoon of vanilla; beat until the mixture is smooth and free of lumps.
Pour the mixture into the prepared pans. Bake for 35 minutes or until a toothpick comes out clean. Allow the cake layers to cool for 10 minutes.
Loosen the edges and let cool further.
Drain the cherries, reserving 1/2 cup of their juice. Mix the reserved juice, cherries, 1 cup of sugar, and cornstarch in a saucepan.
Simmer until thickened, stirring constantly. Add 1 teaspoon of vanilla and let the mixture cool before using.
Combine the whipped cream and powdered sugar in a cold bowl. Beat with an electric mixer on high speed until stiff peaks form.
Using a long serrated knife, split each cake layer horizontally in half. Crumble one of the split layers and set aside. Reserve 1 1/2 cups of the frosting for decorating the cake at the end. Gently brush the loose crumbs off the top and sides of each cake layer with a pastry brush or your hands. For assembly, place one cake layer on a cake plate. Spread 1 cup of frosting on top and then add 3/4 cup of cherries. Cover with the second cake layer. Repeat the previous step by adding frosting and cherry topping. Top with the third cake layer.
Cover the sides of the cake with frosting and place the cake crumbs into the frosting.
Place the frosting in a piping bag with a decorative tip. Cover the top edges and bottom of the cake. Add the remaining cherry topping on top of the cake.
