Pink birthday cake

  • 1 cup sugar, for the cake
  • 1 cup clotted cream, for the cake
  • 1/2 cups milk, for the cake
  • 2 cups flour, for the cake
  • 2 tablespoons baking powder, for the cake
  • 2 tablespoons lime zest, for the cake

  • 1 cup water, hot, for the gelatin
  • 1 tablespoon blueberry gelatin, for the gelatin

Low
  • Beat the San Juan® Eggs and sugar until they double in size and start to lose color. Add the cream and milk and continue mixing. Finally, incorporate the flour, baking powder, and lemon zest, and mix until you have a homogeneous mixture.
  • Pour the mixture into a round mold of 20 cm in diameter and bake the birthday cake at 170 °C for 30 minutes. Unmold and let cool.
  • Cut the cake into 3 parts to have 3 equal discs. Add a bit of blue frosting in each layer, assemble the cake and add a bit more blue frosting on top of the cake. Refrigerate for 10 minutes.
  • Mix the blue blackberry gelatin with hot water until combined. Let cool for 30 minutes and set aside.
  • Cover the birthday cake with pink frosting, use a wavy spatula and a rotating base to decorate the cake. Pour some gelatin on top of the cake, add a bit of blue glitter, and refrigerate for 2 hours or until set.
  • Finally, add pink glitter on the frosting to give the birthday cake a more colorful finish.
