SpongeBob Birthday Cake

  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups flour
  • 1 cup cow's milk
  • 3/4 cups vegetable oil
  • 2 1/4 teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 1/2 liters whipping cream
  • 100 grams cream cheese
  • 150 grams icing sugar, (optional)
  • 250 milliliters cajeta, (store-bought or homemade)
  • 1 kilo icing sugar
  • 2 unflavored gelatin powder, slices
  • 1/2 cups glucose syrup
  • 2 tablespoons edible glycerin
  • 1 teaspoon pecan essence, or whichever you prefer
  • 2 tablespoons vegetable shortening
  • gel food coloring, red, black, and yellow

  • For the base: Beat 2 cups of sugar with 4 eggs until thickened and well combined.
  • Then gradually add 2 1/2 cups of flour along with 2 1/4 teaspoons of baking powder (I like to sift the flour twice to remove any residue and aerate my base), incorporate 1 cup of milk, 3/4 cup of oil, and 1 teaspoon of vanilla. Beat until the mixture is smooth and creamy. When adding the milk, do it gradually so that the mixture doesn't become too liquid.
  • Pour the mixture into a mold lined with wax paper (star paper); if you don't have star paper, grease the mold and sprinkle a little flour on the base and walls; fill the mixture up to ¾ of the mold.
  • Bake for 40 minutes in a preheated oven at 180°C or until a toothpick comes out clean. Let it cool and fill it with whatever you like.
  • For the filling: Whip the heavy cream to soft peaks and add the cream cheese, then incorporate the cajeta and if you want it sweeter, gradually add the 150 grams of powdered sugar.
  • Slice the base, fill, and cover with the cajeta filling. Refrigerate for a whole day or if you need the cake for the same day, put it in the freezer while you prepare the fondant.
  • For the fondant: Hydrate the gelatin in two tablespoons of hot water and let it cool. Microwave the glucose for about 20 seconds until it is liquid, add the essence, shortening, and glycerin.
  • Also, heat the glycerin and incorporate it with the other ingredients, adding it gradually in a stream to the kilogram of powdered sugar. Beat on low speed to combine all the ingredients.
  • As they integrate, we increase the speed so that the fondant takes shape.
  • Once the fondant is ready, set aside ½ kilogram for the yellow color and divide the rest for the other colors.
  • Take the cake out of refrigeration and start rolling out the fondant to cover the cake. First, cover it all in yellow, then make the white shirt, and finally the brown pants. Then add the details of the eyes, tie, belt, and SpongeBob's holes.
