Cajeta Blender Cake

This cajeta blender cake is easy to prepare, as it is made with ingredients and utensils that you likely already have at home. The best part is that the cake is very soft and fluffy, while the frosting gives the final touch thanks to its creamy texture and cajeta flavor.

  • 4 eggs, for the cake
  • 3/4 cups Coronado® envinada, for the cake
  • 1 cup vegetable oil, for the cake
  • 1/2 cups natural yogurt, for the cake
  • 1 1/2 cups flour, for the cake
  • 1 tablespoon baking powder, for the cake
  • 1 jar Coronado® envinada, for the frosting
  • 3 cups butter, soft, for the frosting

  • Blend eggs, Coronado® envinada, vegetable oil, yogurt, baking powder, and flour for 5 minutes until you obtain a homogeneous mixture. Set aside.
  • Pour the mixture into a previously greased and floured cake pan of approximately 28 cm. Bake at 180 °C for 60 minutes. Let cool for 20 minutes. Set aside.
  • With a whisk, beat the butter and gradually add Coronado® envinada until you achieve a creamy texture. If necessary, refrigerate the frosting so that you can handle it perfectly.
  • Cut the cake into three layers horizontally, then fill each layer with frosting and cover the entire cake. Make a spiral design on top for decoration.
  • Refrigerate the cajeta blender cake for 30 minutes or until firm and enjoy!
