Carrot Cake in a Pan

  • 3 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoons ginger
  • 1/2 teaspoons cardamom
  • 1/2 teaspoons nutmeg
  • 2 teaspoons cinnamon
  • 1 1/2 cups sugar
  • 2 cups vegetable oil
  • 6 eggs
  • 3 cups carrot, grated
  • 1 cup walnuts, chopped
  • Flavor Stone® skillet
  • 1/2 cups butter
  • 1 1/2 cups cream cheese
  • 1 teaspoon vanilla essence
  • 3 cups icing sugar

  • In a bowl, sift the flour, baking soda, salt, ginger, cardamom, nutmeg, and cinnamon. Add the sugar and oil, then add the eggs one at a time, the carrot, and the walnuts until you have a smooth mixture.
  • Place the mixture in your Flavor Stone® pan and cook over low heat for 1 hour. Let it cool and set aside.
  • For the frosting, in a bowl cream the butter, cream cheese, vanilla extract, and powdered sugar until you have a smooth mixture.
  • Spread the frosting over the cake and place fondant carrots on top. Enjoy.
