  • 225 grams butter, (1 bar)
  • 3/4 cups raw sugar
  • 2 teaspoons vanilla essence
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tablespoon cinnamon
  • 1/2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1 cup carrot, grated
  • 1/2 cups walnuts, finely chopped
  • 2 packages cream cheese
  • 1/2 cups butter
  • 2 teaspoons vanilla essence
  • 1 cup icing sugar
  • walnuts, chopped, for decoration

  • Preheat the oven to 180°C.
  • Cream the butter in the mixer with the sugar. Add the vanilla and the eggs one at a time. Add the flour along with the cinnamon, baking powder, and salt. Fully incorporate the dry ingredients and add the carrot and walnuts.
  • Pour the previous mixture into a greased and floured brownie pan. Bake for about 25 minutes or until cooked through. Cool and unmold.
  • For the frosting, beat the cream cheese with the butter, add the vanilla, and gradually incorporate the powdered sugar. Beat until you achieve a smooth frosting.
  • Frost the carrot brownie and decorate with chopped walnuts. Cut into squares and serve.
