Carrot Cake Ring

  • 1 cup walnuts, chopped
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder

  • 1/2 teaspoons nutmeg
  • 4 eggs
  • 3/4 cups vegetable oil
  • 1/2 cups Greek yogurt
  • 1 teaspoon vanilla essence
  • 2 tablespoons lime zest
  • 2 1/2 cups carrot
  • 225 grams cream cheese, for the filling
  • 1/2 cups granulated sugar, for the filling
  • 1 egg, for the filling
  • 1 teaspoon lime juice, for the filling
  • 1/2 teaspoons vanilla essence
  • 3 tablespoons flour
  • 112 grams cream cheese, for the frosting
  • 2 tablespoons butter, at room temperature (for the frosting)
  • 4 tablespoons orange juice, for the frosting
  • 1/2 teaspoons vanilla essence, for the frosting
  • 2 cups icing sugar, sifted (for the frosting)

  • Preheat the oven to 180° C.
  • For the cake, place all the dry ingredients in a bowl.

  • Lightly beat the eggs and add the rest of the wet ingredients.
  • Combine the wet ingredients with the dry and mix until well integrated.
  • Add the grated carrots, mix well and set aside.
  • For the filling; beat the cream cheese with the sugar until smooth and creamy.
  • Add the egg, lemon juice, vanilla, and flour.
  • Grease a ring mold and pour half of the carrot mixture.
  • Pour the filling on top carefully and then place the rest of the carrot mixture on top.
  • Bake at 180°C for 45 minutes, after this time, cover with aluminum foil, lower the temperature to 175°C, and bake for 25 more minutes.
  • Remove from the oven and let cool for 20 minutes before unmolding.
  • For the frosting; beat the cream cheese with the butter until smooth.
  • Add the orange juice, vanilla, and sifted powdered sugar, it should have a creamy and lump-free consistency.
  • Pour the frosting over the cake once it is cool and decorate with orange zest and chopped nuts.
