1/2 cups raw sugar
1 cup walnuts, chopped
2 teaspoons baking soda
1 teaspoon baking powder

1/2 cups Greek yogurt
1 teaspoon vanilla essence
2 tablespoons lime zest

225 grams cream cheese, for the filling
1/2 cups granulated sugar, for the filling
1 egg, for the filling
1 teaspoon lime juice, for the filling
1/2 teaspoons vanilla essence
3 tablespoons flour
112 grams cream cheese, for the frosting
2 tablespoons butter, at room temperature (for the frosting)
4 tablespoons orange juice, for the frosting
1/2 teaspoons vanilla essence, for the frosting
2 cups icing sugar, sifted (for the frosting)

Preheat the oven to 180° C.
For the cake, place all the dry ingredients in a bowl.

Lightly beat the eggs and add the rest of the wet ingredients.
Combine the wet ingredients with the dry and mix until well integrated.
Add the grated carrots, mix well and set aside.
For the filling; beat the cream cheese with the sugar until smooth and creamy.
Add the egg, lemon juice, vanilla, and flour.
Grease a ring mold and pour half of the carrot mixture.
Pour the filling on top carefully and then place the rest of the carrot mixture on top.
Bake at 180°C for 45 minutes, after this time, cover with aluminum foil, lower the temperature to 175°C, and bake for 25 more minutes.
Remove from the oven and let cool for 20 minutes before unmolding.
For the frosting; beat the cream cheese with the butter until smooth.
Add the orange juice, vanilla, and sifted powdered sugar, it should have a creamy and lump-free consistency.
Pour the frosting over the cake once it is cool and decorate with orange zest and chopped nuts.
