Carrot Cake with Cream Cheese Frosting

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup yogurt
  • 1/2 cups brown sugar
  • 1 cup sugar
  • 2 teaspoons vanilla essence
  • 2 cups carrot, grated
  • walnuts, (optional)
  • 2 sticks butter
  • 2 eggs
  • 190 grams Philadelphia® cream cheese
  • 1 cup icing sugar

  • In a bowl, add the flour, baking powder, baking soda, and cinnamon, mix it well.
  • In another bowl, add the yogurt, brown sugar, white sugar, and a tablespoon of vanilla, mix until the sugar dissolves.
  • Add the eggs and flour until you have a good consistency.
  • Add the carrots, mix well.
  • Add a stick of melted butter to the previous mixture and stir it.
  • Divide the mixture into two previously greased round cake pans and put them in the oven at 180ºC for 30 min. Or you can pour the entire mixture into a large mold and when the cake is cool, cut it in half and fill it with the cream cheese.
  • For the frosting, pour the cream cheese and butter into a bowl, beat well until there are no lumps, then add powdered sugar and a teaspoon of vanilla.
