This carrot cake is a family recipe that cannot fail at Christmas as it is different, has a touch of ginger, and is topped with delicious cream cheese frosting.
First, mix the oil, sugar, and eggs. Beat for 2 minutes.
Add the dry ingredients: flour, baking powder, salt, cinnamon, and ginger. Beat.
Finally, add the 2 cups of grated carrot.
Place in a previously greased and floured mold.
Frosting: soften the butter and Philadelphia cream cheese, then add the vanilla and finally the powdered sugar, beat until the ingredients are combined and set aside for decoration.
