Classic Carrot Cake

  • 2 1/2 cups whole-wheat flour
  • 3/4 cups sugar
  • 1 pinch baking soda
  • 2 tablespoons baking powder
  • 1 teaspoon cinnamon powder
  • 4 eggs
  • 300 grams carrot, grated
  • 1 jar apple purée, (baby food)
  • 100 grams sour cream
  • 200 milliliters vegetable oil
  • 190 grams cream cheese
  • 500 grams icing sugar
  • 90 grams butter
  • 1 tablespoon cow's milk, (according to consistency)
  • 1 cup dried cranberries

  • Preheat the oven to 180°C.
  • Grate the carrots.
  • Beat the eggs with the sugar and cinnamon.
  • Add the carrots and applesauce to the previous mixture.
  • Incorporate the cream and oil and continue beating.
  • Gradually add the flour, baking soda, and baking powder until the ingredients are combined, and add blueberries. Bake for approximately 45 minutes or until a toothpick inserted comes out clean.
  • For the frosting: cream the cream cheese and butter.
  • Gradually add the powdered sugar.
  • Add milk by the teaspoon until achieving a medium consistency and decorate using a piping bag or spatula.
