Preparation
Preheat the oven to 180 °C (356°F)
Grate the carrots.
Beat the eggs with sugar and cinnamon.
Add the carrots and applesauce to the previous mix.
Add the cream and the oil and keep beating.
Add the flour, baking soda and baking powder little by little until the ingredients are incorporated and add cranberries. Bake for about 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
For the frosting cream the cream cheese and butter.
Add the powdered sugar little by little.
Add milk by teaspoon to obtain medium consistency and decorate with a pastry bag or spatula.
