This classic carrot cake loved by many. It is an easy recipe and it is delicious, it is a dessert with which you can bring to any meeting or meal and for sure everyone will love it!

Ingredients

12 portions
  • 2 1/2 cups whole wheat flour
  • 3/4 cups sugar
  • 1 pinch baking soda
  • 2 tablespoons baking soda
  • 1 teaspoon cinnamon powder
  • 4 eggs
  • 300 grams carrot, grated
  • 1 jar Apple sauce, (baby food)
  • 100 grams sour cream
  • 200 milliliters oil
  • 190 grams cream cheese
  • 500 grams powdered sugar
  • 90 grams butter
  • 1 tablespoon milk, (as needed for consistency)
  • 1 cup dried cranberry

Preparation

Preheat the oven to 180 °C (356°F)
Grate the carrots.
Beat the eggs with sugar and cinnamon.
Add the carrots and applesauce to the previous mix.
Add the cream and the oil and keep beating.
Add the flour, baking soda and baking powder little by little until the ingredients are incorporated and add cranberries. Bake for about 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
For the frosting cream the cream cheese and butter.
Add the powdered sugar little by little.
Add milk by teaspoon to obtain medium consistency and decorate with a pastry bag or spatula.

PRESENTATION

It is presented as a whole cake or in individual square servings as shown in the photograph.

TIPS

Adding the apple puree or grated apple helps the cake to stay moist.
