Easy Microwave Carrot Cake

There’s no better way to end your meals than with this practical carrot cake, which will be ready in 15 minutes.

  • 3 carrots, large and peeled
  • 2 cups oat flour
  • 1 tablespoon cinnamon powder
  • 3 eggs
  • 1/4 cups walnuts, finely chopped
  • 1/4 cups brown sugar
  • 1/2 cups milk
  • 1 cup cream cheese, at room temperature, for the frosting
  • 1/2 cups butter, at room temperature, for the frosting
  • 1 cup icing sugar, for the frosting
  • 1/4 cups carrot, grated, for decoration

  • Process the carrots at medium speed and set aside. Then, add the oat flour, ground cinnamon, egg, nuts, sugar, grated carrot, and milk in a bowl, and mix perfectly with the help of a plastic spatula. Set aside.
  • Pour the mixture into a small rectangular microwave-safe mold previously greased, filling it up to ¾ of its capacity. Cover and place in the microwave for 2 minutes, alternating for one minute. Wait for it to cool and unmold.
  • For the frosting: add the cream cheese and butter in a bowl, beat until creamy with the help of a whisk and gradually add the powdered sugar, mixing perfectly.
  • Decorate the microwave carrot cake with the frosting and grated carrot.
