Microwave Carrot Cake

  • 3 San Juan® eggs
  • 1/3 cups raw sugar
  • 1/2 cups sugar
  • 1/2 cups vegetable oil
  • 1 cup flour
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons cinnamon powder
  • 1/4 teaspoons clove powder
  • 1/4 teaspoons nutmeg powder
  • 3 carrots, grated
  • 1 tablespoon cranberries
  • 1/4 cups walnuts, finely chopped
  • 1 1/2 cups cream cheese, for the frosting
  • 3/4 cups butter, for the frosting
  • 3 cups icing sugar, for the frosting

  • Blend Huevo San Juan®, brown sugar, sugar, oil, flour, baking soda, powdered cinnamon, powdered cloves, and powdered nutmeg until you have a smooth batter.
  • Mix the carrot, walnuts, and blueberries with the blender mixture until perfectly combined; pour the mixture into a previously greased silicone mold.
  • Cook the microwave carrot cake for 8 minutes in intervals of 2 minutes. Unmold when it is cool.
  • Beat butter and cream cheese until smooth, then gradually add the powdered sugar until fully incorporated.
  • Cut the microwave carrot cake in half and fill with part of the frosting, then place the rest of the frosting on top of the cake and decorate with more walnuts and a sprinkle of cinnamon.
