  • 1 teaspoon ginger powder
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 3/4 cups flour
  • 3 eggs
  • 1/2 cups sugar
  • 2 tablespoons vegetable oil
  • 2 carrots, grated
  • 380 grams cream cheese
  • 1 cup icing sugar
  • 45 grams butter
  • 1 teaspoon vanilla essence
  • 1/2 cups pecans, finely chopped

  • 1 envelope unflavored gelatin powder, hydrated and melted

  • Preheat the oven to 180°C.
  • For the sponge, in a bowl, mix all the dry ingredients. Set aside.
  • Beat the eggs with the sugar and oil until they double in size.
  • Add the dry ingredients and the carrot at low speed or by folding gently.
  • Pour the mixture onto a baking sheet lined with parchment paper and bake for 10 minutes.
  • On a clean cloth, sprinkle powdered sugar and place the hot sponge sheet, set aside.
  • For the frosting, in a mixer, add the cream cheese, powdered sugar, butter, and vanilla extract; beat until creamy consistency is achieved.
  • Using a spatula, spread the frosting over the cake, add the walnuts, and roll it up; refrigerate for 15 minutes.
  • Cut slices of about 2 cm.
  • On a bowl with non-stick plastic, place the rolls together until the bowl is covered.
  • For the mousse, beat the cream cheese with the sugar and heavy cream for 5 minutes, then add the hydrated and melted gelatin.
  • Pour the mousse over the bowl with the rolls, level it off, and refrigerate for 2 hours or until set.
  • Unmold and decorate with cream cheese rosettes or to your liking.
