Cheesecake and Chocolate with Brandy Sauce

This cake is great for a special occasion, to impress at a dinner, or for an anniversary. This dessert will drive any ice cream and chocolate lover crazy.

  • 100 grams white chocolate

  • 60 milliliters brandy, for the sauce

  • Preheat the oven to 150 ºC (300 ºF). Line the outside of a 25-centimeter (10-inch) springform pan with aluminum foil. Grease the inside of the pan. Place the cream cheese, sugar, and flour in a bowl; beat until creamy. Add the eggs one at a time, beating well after each addition. Melt 112 grams of white chocolate and incorporate it into the cream cheese mixture, beating with an electric mixer on low speed. While continuing to beat, slowly add the vanilla and 1/2 cup of heavy cream. Pour the mixture into the springform pan.
  • Place the springform pan inside a larger pan with warm water. Bake at 150 ºC (300 ºF) for about 50 to 60 minutes, until the center of the cake is firm.
  • Cool to room temperature for one hour. Refrigerate until set before removing from the mold.
  • Brandy Sauce: Place 2 cups of white chocolate in a bowl. Meanwhile, heat 1 cup of heavy cream in a saucepan just until it begins to boil.
  • Pour the hot cream over the white chocolate and mix everything with a wooden spoon until the chocolate is melted. Add the brandy and continue mixing until everything is incorporated. Pour the sauce over the cold cake before serving.
