Cheesecake with Red Fruits

  • 10.5 grams unflavored gelatin, hydrated

  • 150 grams lard
  • 300 grams María cookies, or vanilla Lincoln
  • 1 cup red fruit jam, or some red fruit jam
  • 1 cup mixed berries, fresh

  • For the base: Preheat the oven to 180°C.
  • Crush the cookies until they resemble crumbs. Once done, add the sugar and melted butter. Mix well.
  • Place this mixture in the dish where you will make the dessert and press it down to form a compact base.
  • Put the dish in the oven for 10 minutes.
  • For the filling: Beat the cream cheese until smooth, gradually add the condensed milk, then the lemon juice and vanilla extract. Mix.
  • In a cup, place the powdered gelatin and add 1/2 cup of boiling water, stirring quickly. Add a splash of cold water and pour everything into the cheese mixture.
  • Pour the filling over the base and let it rest in the fridge for 2 hours.
  • To finish, distribute the jam over the filling and then add the red fruits on top.
