  • 4 apples, in cubes
  • 1/4 cups raw sugar, for the apples
  • 1/4 cups walnuts, chopped, for the apples
  • 1 tablespoon orange zest, for the apples
  • 2 tablespoons cornstarch, for the apples
  • 2 cups cinnamon cookies, crumbled, for the base
  • 2 tablespoons raw sugar, for the base
  • 1/4 cups Inés® coconut oil, melted, for the base
  • 3 cups cream cheese, for the cheesecake
  • 1/2 cups Inés® coconut oil, for the cheesecake
  • 1 cup icing sugar, for the cheesecake
  • 1 cup whipping cream, for the cheesecake
  • 2 tablespoons vanilla essence, for the cheesecake
  • 2 envelopes unflavored gelatin powder, hydrated, for the cheesecake

  • Melt the Inés® Coconut Oil in a pan, add the apples, sugar, walnuts, orange zest, and cornstarch. Cook for 5 minutes or until it thickens. Set aside.
  • For the cheesecake base: Mix the crumbled cookie, sugar, and Inés® Coconut Oil until it forms a paste. Place the crumbled cookie mixture at the bottom of a springform pan and refrigerate for 15 minutes.
  • Beat the cream cheese, Inés® Coconut Oil, and powdered sugar until smooth. Then, add the whipping cream and vanilla, mix, and pour in the melted gelatin. Transfer the cheesecake mixture to the cookie base and refrigerate for 3 hours.
  • Unmold the apple and coconut cheesecake, decorate with the apples, and sprinkle with a little cinnamon.
