Cheesecake with Strawberry Topping

I have always loved desserts, making them and eating them, that's why I searched for many recipes but none turned out as I wanted or imagined. For Mother's Day, I wanted to make a little gift for my mom, so I looked at the notes I had made from various recipes; I removed, added, and modified some ingredients, time, and the way of baking. That's how this delicious Cheesecake came about, which I now share with you, I hope you enjoy it.

  • 3 packages cream cheese, (190 g each)
  • 225 grams sour cream
  • 4 eggs
  • 1 teaspoon lime zest
  • 2 tablespoons flour
  • 1 teaspoon vanilla essence
  • 1 1/4 cups sugar
  • 1 pinch salt
  • 1 cup sugar
  • lime juice, of one lemon
  • 1 cup strawberries, chopped (can be frozen)

  • In a blender, add: cream cheese, eggs, sour cream, lemon zest, vanilla extract, sugar, flour, and salt. Blend until there are no lumps and everything is perfectly combined.
  • Pour the mixture into a mold with a cookie base (optional), if you prefer to omit it, just spray the mold with cooking spray before pouring it in.
  • Place the mold inside another mold with water, bake in the oven at 180 °C for 40 minutes or until the center jiggles slightly and the edges are golden. Let cool to room temperature and refrigerate.
  • For the strawberry topping, place the sugar, lemon juice, and chopped strawberries in a saucepan over medium heat. Stir constantly for 5 minutes until it thickens, remove from heat and let cool. Pour this topping over the cheesecake.
