  • 6 packages cream cheese, (190 g each)
  • 4 eggs
  • 1/2 cups zero-calorie sweetener, or stevia
  • 1/4 cups lime juice
  • 1 tablespoon vanilla essence
  • 1/2 cups mixed berries, for decoration
  • 1 sprig peppermint, for decoration

  • Preheat the oven to 180° C.
  • In a bowl, beat the cream cheese with the egg, the sweetener, lemon juice, lemon zest, and vanilla extract until you achieve a smooth and creamy mixture.
  • Pour the mixture into a mold, tap gently to release the air, and smooth with a spatula.
  • Bake covered for 40 minutes until it sets.
  • Chill in the refrigerator and decorate with red berries in the center and mint. Serve a slice and enjoy.
