  • 10 cookies, pineapple, in bars, for the crust
  • 1/4 cups butter, melted, for the crust
  • 1 tablespoon cinnamon, ground, for the crust
  • 1/4 tablespoons salt, for the crust
  • 1 cream cheese
  • 5 slices canned pineapple, with a bit of syrup
  • 1 cup sugar
  • white rum
  • 1 cup coconut cream
  • 4 cups cream cheese
  • 2 envelopes unflavored gelatin powder, hydrated and melted (7g each)
  • 1 cup whipped cream, for decoration
  • 1 1/2 cups canned pineapple, cut into cubes, for decoration
  • 1 cup coconut, toasted, for decoration
  • cherries, for decoration

  • For the crust, process the pineapple cookies until you get a powder. Add the butter, cinnamon, and salt, and process again until combined.
  • Pour the mixture into a 20 cm diameter cake mold. Compact with a spoon and refrigerate the crust.
  • Blend the cream cheese with the canned pineapple, sugar, and rum to taste until you have a smooth mixture, set aside.
  • For the cheesecake, beat the cream cheese with the coconut cream until fully combined. Add the previous mixture and the gelatin in a thin stream. Pour the mixture over the crust and spread with the help of a spatula. Refrigerate until set.
  • Unmold the cheesecake and decorate with whipped cream, canned pineapple, toasted coconut, and canned cherries.
  • Cut, serve, and enjoy.
