Yogurt Cheesecake with Mandarin

Enjoy this mandarin season with this no-bake cheesecake recipe in individual portions, featuring the citrusy touch of this fruit. Since mandarins are a fruit that is produced from November to March, for this dessert you can also use mandarins in syrup if it is not in season.   • 2 cups cream cheese
  • 1 cup Greek yogurt
  • 1 cup condensed milk
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla essence
  • 1 cup mandarin orange, in syrup (segments)
  • 2 envelopes unflavored gelatin powder, (7 g each)
  • 2 cups cinnamon cookies, for the base
  • 1/2 cups butter, for the base
  • mandarin oranges, (segments) for decoration
  • leaves peppermint, for decoration

  • Blend the cream cheese, mandarin, condensed milk, Greek yogurt, and gelatin.
  • Pour into individual molds until reaching ¾ of their capacity, refrigerate until set.
  • To make the cheesecake base, place the cookies in a bag and, using a rolling pin, crush them until you have a semi-fine powder. Mix the cookie crumbs with the butter and set aside.
  • Place the cookie base on the cheesecakes, refrigerate for 30 minutes.
  • Unmold and decorate with mandarin segments and mint.
