No-Bake Rainbow Cheesecake

Have fun with your kids making this fun recipe: a creamy cheesecake with colors, with an orange cookie base and colorful sprinkles, served with whipped cream. It's the perfect dessert for this holiday season!

  • 2 cups cookies, of orange, for the base
  • 3/4 cups butter, For the base (melted)
  • 1/4 cups rainbow sprinkles, For the base
  • 4 packages cream cheese, (190 g each) For the cheesecake
  • 1 cup whipping cream, For the cheesecake
  • 1 1/2 cups condensed milk, For the cheesecake
  • 1 tablespoon vanilla essence, For the cheesecake
  • 2 envelopes unflavored gelatin powder, (7 g each) hydrated and melted, For the cheesecake
  • pink food coloring, for the cheesecake
  • blue food coloring, for the cheesecake
  • yellow food coloring, for the cheesecake
  • purple food coloring, for the cheesecake
  • 1 cup whipped cream, for decoration
  • 1/4 cups rainbow sprinkles, for decoration

  • Place the cookies in a bag, and using a rolling pin, crush until you obtain a fine powder.
  • In a bowl, mix the crushed cookies with the butter and colorful sprinkles.
  • Place in a 23 cm diameter cake base and use a spatula to press down to compact.
  • For the cheesecake, cream the cream cheese, add the heavy cream, the condensed milk, and beat for 5 minutes, then add the vanilla essence and the gelatin.
  • Divide the mixture into 4 parts, coloring each mixture a different color.
  • Using a spoon, slowly add the mixtures alternating the colors until the mold is filled. Refrigerate until set.
  • Unmold the cheesecake and decorate with whipped cream and colorful sprinkles.
