1/4 cups chocolate chips, white, for the cheesecake
2 envelopes unflavored gelatin powder, (7 g each hydrated and melted, for Cheesecake)
2 cups dark chocolate, melted, for covering
chocolate, green and red, melted for decoration
sprinkles, for decoration

For the base, in a bowl mix the ingredients until a dough forms, place the cookie base in a mold, refrigerate for 20 minutes, set aside.
For the cheesecake, beat the whipping cream with the sugar, cream cheese, vanilla, add the white chocolate chips and vanilla essence, then gradually add the gelatin and beat until combined.
Pour the previous mixture into the mold over the cookie base and freeze until set. Remove from the freezer, cut the cheesecake into equal triangles, and insert the popsicle sticks into the base.
Place the popsicles on a rack and cover with melted chocolate. Refrigerate until the chocolate hardens, decorate with green and red chocolate and colorful sprinkles.
