  • For the cake: First, sift the flour together with the baking powder and set aside for now.
  • Separate the egg yolks from the whites, beat the yolks with the granulated sugar in a bowl until they double in volume.
  • On the other hand, melt the chocolate together with the butter in a double boiler. Set it aside for a moment. Whip the egg whites until stiff peaks form.
  • Mix the melted chocolate from the double boiler with the reserved yolks, add the sifted flour and baking powder, and mix well. Finally, gently fold in the egg whites to avoid deflating them.
  • Let it rest for 2 or 3 minutes, and meanwhile prepare a 15 cm diameter stainless steel ring, grease it with butter, and dust it with flour. Place a piece of parchment paper on the tray, put the ring on it, fill it with the batter, and bake at 160º for 25 minutes. Let it cool and unmold.
  • For the chocolate layers: In a bowl, melt the chocolate with the butter. On the other hand, whip the cream with the sugar, carefully mix it with the chocolate, and set aside.
  • Assembly: Cut the cake into three layers to make two tiers. Fill the two layers with chocolate, and using a piping bag with a smooth tip, decorate the top as shown in the photo.
  • If desired, before filling, the cake can be soaked with amaretto or another liquor of your choice.
