Chocolate Cake with Coffee

  • 2 eggs
  • 1 tablespoon sugar
  • 2 tablespoons butter, softened
  • 1 cup vegetable oil
  • 1/2 cups cocoa powder
  • 1/2 cups jocoque, or buttermilk
  • 1 tablespoon vanilla essence
  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1 cup water, boiling
  • 1 cup semi-dark chocolate chips
  • 1/2 cups butter, softened, for the chocolate frosting
  • 1 cup icing sugar, for the chocolate frosting
  • 2/3 cups cocoa powder, for the chocolate frosting
  • 1 teaspoon vanilla essence, for the chocolate frosting
  • 2 tablespoons cow's milk, for the chocolate frosting
  • 1 tablespoon strong coffee, for the chocolate frosting

  • In a large bowl, mix the following ingredients one at a time, stirring well after each addition: eggs, sugar, 2 tablespoons of butter, oil, cocoa powder, yogurt, and vanilla.
  • Sift the flour, baking powder, baking soda, and salt. Add to the sugar and egg mixture, then add the boiling water and stir.
  • Pour the batter into two 20 cm round baking pans (greased and floured). Sprinkle 1/2 cup of chocolate chips over each pan. Bake at 180°C for 25 minutes, let cool slightly.
  • To make the frosting, start by beating 1/2 cup of butter, powdered sugar, and cocoa in a bowl. Add 1 teaspoon of vanilla, milk, and coffee. Beat until creamy. Add more powdered sugar if you want a thicker consistency. Spread the frosting over the cake.
